Monoliths not saving

I'm pretty sure I'm supposed to be able to use the Monoliths for fast travel but every time I use one to move around the map I lose the rest, they turn grey again. (I've clicked them everytime I walk to them to active again but still no luck)

Any ideas or am I wrong about this?

Only one last activated will be active. Monoliths are not like portals. Not only you can teleport to it, but it is your also spawn point when you die or load character.

Indeed, Portals are designed for quick travel from one map location to another.

Is it worth it to do the side quests at all? I'm leveling pretty decent but holy hell I don't remember there being so many!

Quests are good for set items.
Leveling on quests becoming better on higher levels, where experience from monsters reduced.

After completing a certain number of side-quests one will be rewarded with unique weapons, shields and set armor. Certain chain quests reward legendary weapons, unique shields and armor; a couple of side quests even allow ones character a skill and an attribute point.
