Chicken Quesadillas

OK, these are not particularly authentic Mexican cuisine, but they are easy to make and quite yummy . . .

 

Ingredients:

 

Boneless chicken breast

Bell Pepper

Onion [Vidalia or sweet] (optional)

Shredded sharp cheddar

Shredded mild cheddar

Flour tortilla

Olive oil

Cayenne pepper powder

Salsa

Sour Cream (optional)

 

Instructions:

 

Butterfly and grill chicken breast (I use a Forman grill)

 

Place ~1/2 TSP olive oil in large frying pan on Medium.

Dice chicken (about a handful) and a little bit of bell pepper (and onion if you wish).

When pan is hot, place tortilla in pan and spin it around so that it is lightly coated in olive oil.

Place a thin layer of mild cheddar on one half of the tortilla.

Place chicken, pepper, and onion on the cheese.

Sprinkle a little Cayenne pepper powder on chicken.

Put a thin layer of sharp cheddar on top of chicken.

Fold bare half of tortilla on top of covered half.

Allow to cook for a couple of minutes and flip (should be lightly browned).

Allow to cook for a couple of minutes and remove.

 

Quesadilla should be a little crispy. Cut in thirds, serve with salsa and sour cream (if desired). With a side dish, serves one.

 

The cayenne pepper adds a little kick, the bell pepper a little crunch and taste, the onion a little taste. You could also add a little shredded lettuce if you like.

 

It takes about 10 minutes to prepare the chicken and let it cool, and 5 minutes to make one quesadilla. You can make a full quesadilla with one tortilla on the top and another on the bottom, but flipping it is more of a hassle.

Sorry, just noticed this one.

Gotta try this when the wife is away later in the year. Sounds good.

BUT be kind to a foreigner. and explain:

a) 'Flour tortilla'?

b) 'Bell' pepper?

 

Also, unfortunately, I have hardly eaten chicken since I was taken to see a 'battery' chicken installation when they were the latest thing, some 40 odd years ago. Horrific. But we get good farm chickens locally and this one sounds good.
