Schmalz is german for lard. Grieben are the crispy parts of porkskin which aren't filtered away. Smeared on bread you get Griebenschmalzbrot. I add pieces from sour apples and onions when doing it.

Griebenschmalzbrot -> Marmelade

I LOVE marmelade.. hated it a ton when i was a kid and my dad would make us eat it, but its all good stuff now
