I know a cherry farmer who says he delivers them and they are from germany and his ones are named 'Schwarzer Schüttler'. Sounds nowhere as good I haveto agree. 1

chattius 2,728 Posted January 30 Posted January 30 fat -> net I do many recipes which use Fettnetz (fat net)- the thin net like membrane around inner organs of some mammals. Special meat balls: French aur pair calls them Cailettes, me Fleischbälle im Fettnetz. Rough cut pork and vegs wrapped together with fat netting. The 'net' is just the thicker parts of the membrane. Hope you can see it. And then BBQ Mine are most often using meat from butchering fresh road kills, get the nets from there too. Cailettes are done short before the vegs turn brown. Black is surely over done
