In the second act of the game, I came across a quest called Take the Bull by the Horns. It was close to the Unique Mount start point. A wife wants her husband killed, but the catch is that he got turned into a minotaur. The minotaur is in a cave, and killing the minotaur will provide some reward. That's 2 for 2 in regards to the Sacred games having some memorable quest with a minotaur(Moca was from a quest in Sacred 1).

There's also another minotaur quest - it's in the east side of Artamark, a bit north and east of Griffinborough and Valeview. The guy is on a farm and he's got a problem. It seems there are 8 minotaurs terrorizing his farm and he needs you to deal with them. You have to go through a multilevel cave to get 'em all.

 

And let's not forget Holos, the minotaur miniboss - he and his quest are located in the northeast corner of the desert region.
