kidneys -> sour
Saure Nierchen / Sour kidneys:
wash kidney from a pig
cut in not too small pieces
put them in milk for a day to get rid of the strong taste and smell
roast in butter
take them out of the pan
put flour in the pan with the rest of the butter
roast till brown
add salt, pepper, beef broth, vinegar and boil it slowly
add citron juice, (if you like caraway),
heat but not boil the kidney discs in the mix
serve with mashed potato
