  1. Odd that Dragon Brother. I stopped buying a well known brand of pickle - sold in GB - which listed rutabaga as an ingredient. Dishonest - couldn't include turnip/swede which the Brits would have recognised I think, Chattius, that for outright honesty you have to give the French the prize - it is correctly called Pisse-en-lit here. I think Wolfie that Shallot (échalotte here) is another example of a name used differently in different areas - Dragon Brother is quite right for our region.
  2. Wow - this looks more promising than that old topic that Claire put on which end up discussing what to do with your motor-cycle-delivered-pizza left-overs. This includes all the stuff like Shepherds (sorry gogo Sheppards) Pie, Cottage Pie, Rissoles, Bubble and Squeak ..... phew Chattius, is life long enough to cover what is in effect everyday cookery, more often than not without recipes and never-to-be- repeated-off-the-cuff cookery? Will have to come back when I have read this properly and had time to think.

Rags to riches dish, so to speak. I seem to remember them cropping up constantly in tales of the Gold Rush and the Wild West. The basic is just that. Pork and baked beans out of a can. But there are almost infinite variations according to country, region, and socio/economoic status ... which I hope that you will come up with and describe here. To start the ball rolling ... in English english ... but not suitable for preparing with the free hand while you are sitting at the PC ... The bad news first: Soaking time - overnight; preparation time - 20mins; cooking time - at least 4 hours (!!); Oven - 150C/300F. Ingredients (for 6 to 8) 2oz butter 1 lb lean fresh pork cut into 1/2" cubes 2 rashers rindless streaky bacon cut into strips 1 lb dried haricot beans, soaked overnight and par-boiled for 10mins 12 oz tomatoes, blanched and skinned 1 tspn salt 1/2 tspn freshly ground pepper 1/4 tspn dried basil 1/4 tspn dried thyme 2 tspns sugar 1 pint stock Heat butter in heavy frying pan and fry pork cubes till lightly browned all over; Grease a deep casserole, put bacon strips at bottom; Drain par-boiled beans and put half in casserole; Add pork and cover with rest of beans; Add puréed tomatoes, basil, thyme and sugar; Add stock; Stir well; Cover; Cook in preheated oven; at least 4 hours. If, as I suspect, you find this far too cumbersome to prepare from basics, you should be able to see how this can be fairly simply adjusted for tinned beans,and tomatoes, stock cubes, and the rest - or even a can of ready prepared pork and beans from the supermarket. What you have here is the recipe for a home made product, which is well suited to an old fashioned wood burning oven, which of course all of you possess. Let's have your own versions - even south of France cassoulet would almost qualify here.

  7. Apologies for absence, yet again. Podgie has been helping his doddery old Grampy to survive in the Shire, and I got slightly hooked. Incredibly complex possibilities and not to be rushed. If you don't understand that, I am ashamed of you. (Nota Bene: I had written this before I saw Chattius' thread which covers a similar theme - but this is more basic so I will let it run) Don't know if other people have the same problem with culinary (!) posts - vocabulary. I get the feeling that much of what I write, food, recipes, is not understood on the other side of the Atlantic, or even in other parts of Europe. Partly generation gap (several), partly terminology. Generation gap - can't do anything about that. Some people find grandma's cooking still something to dream about. They can do something about that - if they can be bothered. But vocabulary!! It is almost as bad as vocabulary in jobbing building, not just national variations but regional, even town to town. I remember a time when towns like Dundee (closed shop) and Glasgow (sheer size) were more or less self supporting islands and had their own trades' vocabularies. And how about nogging pieces/dwangs ..... So in the food market we have turnip/swede/rutabaga all the same thing depending on region or country; cybies/ spring onions/ scallions and those are regional; endive/chicory in France and England where endive is chicory and chicory is endive, like the swede-turnip thing in GB. I suppose the supermarkets are forcing all these variations to standardise. Boring. So I wondered how many different names for the same thing people here could come up with. Should put a timing device on this - how many in one minute ....ready ... get set ... boing.
  8. Hmph. Viv sometimes uses them in salads, but usually we cut them in half remove the stone (obviously) fill the centre with peeled prawns/shrimps, Marie Rose sauce, and eat them as a starter. Yummy.

(from a Readers Digest publication) I think most countries have a variation on this dish. French cassoulet is a sample, yet another poor people's dish now complicated by being fashionable and accepted "cuisine". My daughter in London loved this when we made it here, but found that she could not get the right beans at home, and was dissappointed with the result. These are large haricot beans, but we have never found that the dried beans produce the right quality. I will publish a recipe in the main kitchen sub-forum once I can be more precise about the beans. All I know is that we buy a big sack of them in season and sit shelling them for a day or two, then stock them in the freezer. I wonder if it would be in line with Chattius "international cuisine" idea if people were invited to publish their own regional versions of a basic dish like this? Did I see you somewhere suggesting a regional/national cookery thread? Sounds a good idea. A lot of recipes being posted are 'regional/national', with regional ingredient names and terminology. I often wonder how the people out west cope with translating it into there own teminology. Works both ways. American ingredients are something of a mystery to me. It is a pain to have to hunt on the web for meanings all the time. Even within Europe with its many different languages and dialects it is often even more difficult. Your stuff is not a problem, you go to great lengths to supply references and photos (don't know where you find the time) How would you propose to organise such a thread? You might need a separate thread (or even sub-forum) for each region/nationality ... South American, North American, Japanese, German, French, British, etc ... hmmmm? As long as the "Yanks" don't claim apple pie, pumpkin pie or pork and beans as originating in the US!
  12. I see the real pro's are on Snowbourn. The grandpa's are on Withywindle - couldn't resist that name. Crafting like mad, not levelling much, trying out all the various combinations/characters, nothing above level 16 yet. Nice thing about it is there is no rush, no pressure, play it as the fancy takes you. Have not spent a penny yet, but no doubt the day will come. Fabulous scenery especially the rolling downs of the Shire. Not too crowded. Explore, fish, do a quest when the fancy takes you, get killed a lot. Relaxing - at level 16 Quite happy pottering there till I can get Sacred 2 working.
  13. No.1 wife she say (she had not seen your latest post)... "Hello, Chattius, I found your account of a baking day very interesting, but I have never used millet in this way. I do sometimes buy 'mixed grain' flour which contains millet, however. I do use oats occasionally in bread, though, and have one or two rather tasty recipes for 'oatmeal bread'. The oatmeal is of course mixed with ordinary wheat flour or it would not rise, and gives a deliciously 'nutty' texture to the bread. How on earth do you knead bread made from 5kg of flour and 1kg of millet (plus the extra weight of the water it's cooked in)? I confess that I usually cheat and use the food processor, which can only manage 1kg at a time, but even when I do it by hand, I would never tackle more than a couple of kg. Just feeble, I suppose! What size are your cubes of yeast? I normally use 1 x 40g cube of yeast, which is usually enough for about 1 1/2 kg of flour, and make 2 or 3 different types of bread. I have once or twice used spelt flour, but it is expensive here, and the bread turns out rather 'heavy' and 'doughy'. Is the secret to use more yeast? As my bread never seems to keep well, I usually freeze most of the batch for use over the next 10 days, until we have another baking day. It would be interesting to know how other people manage to make bread that keeps reasonably fresh for several days, let alone for weeks! We don't eat huge amounts of bread except when travelling: Bondbug likes to be fed sandwiches every couple of hours - he needs nearly as much fuel as the car!"
  14. Hi Chattius. I have been neglecting the kitchen lately and just spotted this. The quantities you deal in leave me gasping, compared with our little 90cm diameter oven and the quantities for two people! We had a 'four-day' (four=french for oven) yesterday. Maybe one cube of yeast for the bread, perhaps even less. I am going to ask my wife to read your post and write down her reactions. She is the prime cook here and it is more than time she took a direct interest in the Dark Kitchen. The millet flour looks interesting. I remember on a rare visit to Germany (Köln) in the 50s being struck by how different the bread in Germany was from the normal white bread, or even brown bread, of Britain and France. However, as she only gets access to the PC when I am out watching rugby (on TV at local bar), we should have her comments this evening! P.S. Have to be careful what I say here, she will probably see this later.
  15. I will check your suggestions with my Tech, Wolfie. Thanks again. You may well be right Elwin, but I can't really comment. It would be re-assuring to know what causes your RAM problem. There may well be other threads which discuss this aspect of RAM.
  16. Great Wolfie. I have only 2 RAM slots, I.e. 2x512 which I only put in new last year ago, I think because I was having the same problem trying to instal Sacred 2 and someone said I needed more RAM. Should have asked them to be more specific about RAM size. Ah well, bin for them and I will see what is on offer - low density (that shouldn't be too difficult even in French. I will check the prices for more up-to-date graphics cards, and update if possible cash-wise. I have to leave the PC with the shop for a week if I want to get it checked - not their fault, just that I only get into Tours once a week. I will deal with the RAM first, then see if there is any cash left. If not I will try to turn off PhysX effects.
  17. Can I do anything about the DEPTHSTENCIL feature? I tried opening again, and this time got as far as a character selection screen, with a button for start game. Then I eventually got a message "unable to connect to network (64). Cannot establish connection to our servers. Please check your internet connection and your firewall settings" As you can see the internet connection is working fine, and I have cleared all firewall settings for game client, game server, update client and Sacred2-UK-INT-2-40-0-0.exe Since then I have got no further than the opening DOS type screen and the error message at the top of the thread has come back. I ended up putting the skipopenal on the end of the target address in the shortcut that I put on the worktop. Not that it is apparently having any effect, but is that correct? Elsewhere it either did nothing or did not seem to make any sense at all. It was very obvious with the character selection screen that extra RAM is needed. Odd however that I have had no problems with other on-line games of later date than Sacred 2. Thanks again for your help.
  18. OK thanks. I am only semi-computer literate, so a few points here. (Wolfie) - I can check out the AGP/PCIe business. As I understand it, I do not need to disable AGP or change anything - you are making a point for the future and thanks. I don't remember ever seeing a manual, but I have a helpful computer shop. - I need more RAM. How much? Not difficult to handle that problem, but it will be a week or two before I can get the parts. Is this what "CheckDeviceFormat/D3USAGE_DEPTHSTENCIL failed" means? Or is the error message, as usual, irrelevant? - and sorry, but what do you mean by "Let us know what you've got in your system... "? Dust, mice, bats, too much food from Xmas/New Year? OK I told you I was thick. (Marcus) - skipopenal !? what on earth ..... but I found a post by Knuckles with precise directions, so no problem. - I thought I was rid of PhysX from last time. Did Sacred 2 re-instal it? All you need is a farmer friend ... and a tailor, woodworker, weaponsmith ... I have a hobbit hunter who cooks the most useful Coney Pie you ever tasted ...

  23. Glad you started this Arilaftia - I was just about to do so. I tried Lotro a year ago and had so many problems with the demo, then downloading the game itself that I abandonned. I paid a sub, but got no response, guidance or anything. Not entirely their fault perhaps as my credit card was pirated about then and there was a delay sorting out the payment thro Paypal. But they kept sending me emails, which went into the bin, till suddenly it became free, and I was offered 5 chars per server as an existing client! So I tried again. No problem. Downloaded and installed sweetly and I have been playing ever since. Even got my wife (LOTR fanatic)signed up - but 2 chars only .. Ha ...Ha! It is great. I have had no problems. The forum is good. The few players I interact with on-line have been great. I spend a lot of time mining, cutting wood, farming etc, with 4 chars on the same server interacting by post! It is a game that you can take at your own speed. I like that. Highly recommended for all reasonably sane players. OK Gogo ... be a devil and glance thro the WIKI and the lorebook. Promise it won't bite.
  24. Just updating. The game came up elsewhere and reminde me of this thread. I have been playing some time now and have not spent a penny. Living on the charity of those with more money to sling about perhaps, but I cannot get rid of the feeling that spending cash to hasten things, which is no doubt what the 'sponsors' want, is cheating. And, with a game like this, what is the hurry. My chars walk quite a lot and enjoy crafting in between spasms of madness. The biggest trouble has been the problems after updates. The last one developed colour problems which, despite a helpful forum, took me three weeks to get round. Like playing in thick snow - very seasonal but unendurable while it lasted.
  25. Thought I sent you a brief note last night Podgie - must have omitted to "post". Not to worry. I caught sight of Chattius earlier post in this thread with his Isetta and jews harp. And he is just a growing lad. Incredible. I have half reloaded Sacred2, but still have to update from 2.0.2 to 2.43. Haven't time just now. Takes ages - then it probably won't work. On-line I play two 'freebies' Runes of Magic and Lotro. RoM is quite good but subject to all sorts of infuriating problems particularly after updates. Last one took me three weeks to sort out. Lotro is good. If you are looking for constant nerve-wracking conflicts, these may not be your games. I remember with Sacred 1 I eventually got tired of the sheer density of enemies ... like trying to run through treacle and without a great deal of variation. I liked WoW which could be played with less hassle, but got tired of the prancing around of idiots demanding duels - even one lvl38 character who pounced on a new char of mine as he emerged from the starters womb, so to speak. And I couldn't afford it! The two games I mention are more relaxing. Plenty of hassle if you want it, but both have a range of crafts for relaxation. Lotro even has housing estates where you can decorate inside and out and socialise with the neighbours - when they are there. I spend a lot of time mining, chopping wood, farming and working to produce weapons, armour, food etc., as a rest between hacking around and questing. No rush. The levels build up fast or slow as you wish. And the settlements and folks are well done, as between The Shire and lands of dwarves, elfs and humans.
