For this type of noodle pan I prefer selfmade Spätzle, better control of amount of eggs , flour, salt and perhaps added vegs and cheese. Granny got it from her granny who came from Alsace region. Wood selling ancestors found there wives from german speaking places spread over whole europe it seems.
Pot with boiling water , the Spätzle dough as a thin layer on a wooden Spätle board, and then the dough is scraped as thin stripes into the water.
