CompEngRJH 0 Posted August 22, 2007 Share Posted August 22, 2007 So This is what I had tonight, it was sooooo good I had to share (I didn't take that picture, it was courtesy of the food network where I got the recipe) 3 TBSP extra-virgin olive oil 4 Portobello mushrooms 1/2 lbs. pasta 2-3 cups of sauce( see below) 1 cup shredded mozzarella cheese 1/4 cup grated Parmesan 2 tablespoons butter, cut into small pieces Place a grill pan over medium-high heat Prepare your version of marinara sauce (your home-made version or doctored up store bought kind) Drizzle 3 tablespoons of olive oil all over the mushrooms lightly salt and pepper both sides. Add extra olive oil to the grill-pan to prevent the mushrooms from sticking. Grill until the mushrooms are heated through and tender, about 5 minutes per side. Preheat the oven to 400 degrees F. Place 4 1/8 cups of the marinara sauce on to bottom in each corner of a 9 by 13-inch baking dish. Place the grilled mushrooms on top of the marinara sauce and top with another 1/2 -1 cup of marinara sauce. Sprinkle with the cheeses and top with the butter pieces. Bake until the cheese melts and the top is golden, about 15 minutes. In the mean-time prepare pasta and drain. When the mushrooms are done, place pasta on the plate and the mushrooms on top. cover with more marinara sauce. Serves 4. Enjoy! --Russ Link to comment

I only had the luck of eating Portabello's once, and that was at a fancy dinner that someone was paying for These fungi are so expensive here. But the flavor and consistency is like a nice piece of meat...I don't see why vegetarians ever have to suffer with options like this. Is this recipe something that you make often?
