Portobello Mushroom Parmesan

So This is what I had tonight, it was sooooo good I had to share

3 TBSP extra-virgin olive oil

4 Portobello mushrooms

1/2 lbs. pasta

2-3 cups of sauce( see below)

1 cup shredded mozzarella cheese

1/4 cup grated Parmesan

2 tablespoons butter, cut into small pieces

 

Place a grill pan over medium-high heat

 

Prepare your version of marinara sauce (your home-made version or doctored up store bought kind)

 

Drizzle 3 tablespoons of olive oil all over the mushrooms

lightly salt and pepper both sides.

Add extra olive oil to the grill-pan to prevent the mushrooms from sticking.

Grill until the mushrooms are heated through and tender, about 5 minutes per side.

 

Preheat the oven to 400 degrees F.

 

Place 4 1/8 cups of the marinara sauce on to bottom in each corner of a 9 by 13-inch baking dish. Place the grilled mushrooms on top of the marinara sauce and top with another 1/2 -1 cup of marinara sauce.

Sprinkle with the cheeses and top with the butter pieces.

Bake until the cheese melts and the top is golden, about 15 minutes.

 

In the mean-time prepare pasta and drain.

When the mushrooms are done, place pasta on the plate and the mushrooms on top. cover with more marinara sauce.

Serves 4.

That's an amazing recipe dude!

I only had the luck of eating Portabello's once, and that was at a fancy dinner that someone was paying for :D These fungi are so expensive here. But the flavor and consistency is like a nice piece of meat...I don't see why vegetarians ever have to suffer with options like this. Is this recipe something that you make often? Or was it just a fanciful creation? Lucky guy. Email me any of the leftovers if you can, okay?
